🧆 Sweet and Sour Meatballs

🔥 Serves: 4–6 | ⏱️ Ready in: ~30 minutes

🛒 Ingredients:

For the Meatballs:

  • 500g ground beef or pork (or a mix)

  • 1 egg

  • 1/2 cup breadcrumbs

  • 1 small onion, finely diced

  • 2 cloves garlic, minced

  • Salt & pepper to taste

  • 1 tsp soy sauce (optional)

  • 1 tbsp chopped parsley (optional)

For the Sauce:

  • 1/2 cup ketchup

  • 1/2 cup brown sugar

  • 1/3 cup rice vinegar (or apple cider vinegar)

  • 1 tbsp soy sauce

  • 1 tbsp cornstarch mixed with 2 tbsp water (slurry)

  • 1/2 cup pineapple juice (optional but SO GOOD)

  • Bell peppers & pineapple chunks (optional add-ins)

👩‍🍳 Instructions:

1. Make the meatballs:

  • Mix all meatball ingredients in a bowl until well combined.

  • Form into small balls (golf ball size).

  • Brown them in a pan with a bit of oil OR bake at 200 °C for 15–20 min.

2. Make the sauce:

  • In a saucepan, mix ketchup, brown sugar, vinegar, soy sauce, and pineapple juice.

  • Heat gently, then stir in cornstarch slurry and whisk until it thickens.

3. Combine:

  • Add cooked meatballs into the sauce and simmer for 5–10 minutes.

  • Optional: add chopped bell peppers and pineapple chunks and cook until tender.

4. Serve with:

  • Steamed rice 🍚

  • Noodles 🍜

  • Or even as party appetizers with toothpicks!

😍 Pro Tip:

Double the sauce and drizzle it over rice — it’s that good. If you want a spicy kick, toss in a bit of chili flakes or sriracha.
