🧆 Sweet and Sour Meatballs
🔥 Serves: 4–6 | ⏱️ Ready in: ~30 minutes
🛒 Ingredients:
For the Meatballs:

500g ground beef or pork (or a mix)

1 egg

1/2 cup breadcrumbs

1 small onion, finely diced

2 cloves garlic, minced
-
Salt & pepper to taste

1 tsp soy sauce (optional)

1 tbsp chopped parsley (optional)
For the Sauce:

1/2 cup ketchup
-
1/2 cup brown sugar
-
1/3 cup rice vinegar (or apple cider vinegar)

1 tbsp soy sauce
-
1 tbsp cornstarch mixed with 2 tbsp water (slurry)

1/2 cup pineapple juice (optional but SO GOOD)

Bell peppers & pineapple chunks (optional add-ins)
👩🍳 Instructions:
1. Make the meatballs:

Mix all meatball ingredients in a bowl until well combined.

Form into small balls (golf ball size).

Brown them in a pan with a bit of oil OR bake at 200 °C for 15–20 min.
2. Make the sauce:

In a saucepan, mix ketchup, brown sugar, vinegar, soy sauce, and pineapple juice.

Heat gently, then stir in cornstarch slurry and whisk until it thickens.
3. Combine:

Add cooked meatballs into the sauce and simmer for 5–10 minutes.

Optional: add chopped bell peppers and pineapple chunks and cook until tender.
4. Serve with:

Steamed rice 🍚

Double the sauce and drizzle it over rice — it’s that good. If you want a spicy kick, toss in a bit of chili flakes or sriracha.
